Tough and resistant, long-lived and always fruitful, so healthy that it is practically miraculous, the olive tree is a tree of pure life wisdom. It has always been with the human race, we started cultivating it when we were just hunters and gatherers; in a way, along with it we developed intelligence as a species, figuring out how to get to the priceless treasure hidden in its bitter fruits.

Always and forever

From Mesopotamia, Syria and Palestine, olive growing came to Crete and marked the dawn of the ancient Greek civilization, for which the olive conquered the entire Mediterranean basin. Wreaths made of its branches and amphorae full of its oil were presented to Olympic winners, its beneficial oil was called liquid gold by the ancient Homer in the 8th century BC, the same one who gave his most famous sermon on the Mount of Olives, and it was made of olive wood. , they say, the cross on which Life defeated Death was also made. There are still living trees that vividly remember those bygone times: an olive tree can, in fact, live for millennia, one olive tree in Crete is, they say, perhaps four thousand years old, and even on our soil – more precisely, in Brijuni, in the place Lun on Pag and in our immediate vicinity, in Kaštel Štafilić – you can find trees that witnessed the rise and fall of the Roman Empire. 

Almighty fruits

The olive is simply inseparable from Mediterranean cultures and civilizations, our myths and legends, diet and customs, religion and science. The latter fully enlightened us on the magnitude of her miracles. Today, we all know that there is almost no healthier and more powerful fruit in the world. Prevents the oxidation of cholesterol, neutralizes free radicals, prevents heart disease, reduces the risk of atherosclerosis, affects eye health, strengthens the blood and regulates blood pressure, raises serotonin, helps in weight loss and cancer prevention, acts as a natural analgesic, provides skin and hair health and beauty, in summer it protects us from burns, in spring and autumn from allergies, and in winter it takes care of the health of the digestive tract, which is vitally threatened by viruses, bacteria and the abundance of heavy food that we indulge in during the holidays.

A welcome guest at every pizza

She does all that, and finds time to show up at every pizza! A real, authentic pizza – napoletana or any other – is made from dough with olive oil, and most pizzerias (which don’t hold their own, let’s say snobbishly, joking with the proverbial half-truth) will put one or two olives on top, because that’s the custom. Most often, in our pizzerias, you will get a green olive on the pizza, which makes our soul cry because, proud snobs that we are, we know that pizza truly loves only fully ripe, black olives with balanced bitterness and a rounded flavor that complements the flavors of the pizza, and does not serve only as a simple, prosaic decoration. In our pizzeria, we treat every food item with due respect. We only serve seven types of pizza, but that’s why each of their components has a perfectly justified reason for being, including the good old olive. And not just any: Sette Sorelle serves only Kalamata olives!

Papa-Mata Kalamata

The name of this variety is actually kalamon and its trees can be found all over Greece and the Mediterranean, but the real Kalamata olive of protected geographical origin is grown exclusively in the vicinity of the city of Kalamata in the province of Messenia on the Greek peninsula Peloponnese, and it is from these fields that every delicious olive on our farm comes. i.e. to your delicious pizza. Its canopy is rich and lush, its over 10 cm long leaves are the largest in the olive kingdom, and its ripe fruits, which can only be picked by hand due to their sensitivity, have a specific elongated shape and a deep dark purple color. They are characterized by an umami salty taste of pronounced refined bitterness, so spectacularly rounded that a handful of these olives can function both as a meal in itself and as an irreplaceable accompaniment to Mediterranean delicacies. And there is simply no better olive for pizza, we will testify like that on the polygraph, in the courtroom and in your eyes, it doesn’t matter, because we know that the truth is on our side.
